Glorious sweet breakfast
I love breakfast. If breakfast is good, a good day is practically guaranteed, right? Well, it definitely contributes to feeling great. I believe you’ll enjoy this recipe for the following reasons:
- Great ingredients: oats always keep me full, and when you add banana, maple syrup (or honey), and chocolate chips (for me, dark chocolate is a must), a delicious result is guaranteed.
- Easy to make ahead: On weekends, we like to prepare them “from scratch” when we have a little more time, and while the kids get ready, breakfast is freshly baked. During the week, they’re perfect straight from the freezer—just heat them in the microwave or oven, and they’re ready to enjoy.
- Completely customizable: You can adapt the recipe with fruit, nuts, or chocolate. Some ideas are listed below.
Tips and tricks and filling ideas
This recipe is really simple, as everything is prepared directly in the baking dish that will also be used for baking. The best part is that you can easily adjust the ingredients to your taste and to what you have on hand at home.
Oats – you can easily swap them for others, for example spelt flakes.
Maple syrup – if you don’t like it or don’t use it, no problem; honey works just as well.
Chocolate chips – you can skip them and add blueberries or chopped pecans or walnuts instead.
Peanut butter – we love it combined with banana, but you can also use almond or hazelnut butter
Fresh berries – if available, we like to serve the baked oatmeal with fresh berries for freshness and flavor. Our kids also enjoy it with Greek yogurt.
Storing and freezing
The most convenient part of this recipe is that the baked oatmeal is easy to store.
After baking, transfer it to a storage container (we prefer glass containers with lids) and keep it in the refrigerator for up to 3 days. It will lose some of its crispiness, but you can easily reheat it in the oven or microwave. You can also enjoy it cold.
It’s also easy to freeze. Once baked, let it cool, cut into portions, and store in freezer bags. Keep it in the freezer for up to 1 month. Before serving, let it thaw, then reheat in the oven or microwave.
